Favorite sub-genre of Italian Films: I'd say a tie between Zombies and supernatural/mythical horror. Zombies (encompassing even contamination/plague) Zombie, City of the Living Dead, Burial Ground. As for supernatural, stuff like Inferno, The Beyond, Demons, and The Church. I think Fulci is a great way to go into these because he covers many genres, even really liked The Devil's Honey. I lastly want to give an honorable mention to Italian post apocalypse action films, like Escape from the Bronx and 2019 After the Fall of New York. Even if several of them are rip offs of Mad Max, they are still really fun, gorier, and don't get enough love.

If Escape from the Bronx isn't apocalyptic enough then The New Barbarians or Endgame, that sort of thing.

I do enjoy the occasional Spaghetti western especially when wrath & vengeance are included in the plot. Django is a classic. These films were a big influence on Quentin Tarantino's work as we all know.

I would have to say that I thoroughly enjoy gialli as well as spaghetti western. Both subgenres are engaging for me to watch and I can't say I've ever watched a bad gialllo or spaghetti western. You can't go wrong with spending a lazy afternoon with either one.
